It’s not what our beers contain that makes them different, it’s what they don’t contain:
no additives, no preservatives, no pasteurization… and no rush.
We brew our beers based on the formulas we develop, carefully selecting the finest natural ingredients to ensure the best taste experience. Some of our beers contain ingredients that grow in our fields, such as barley, or contribute to the richness of typical Navarrese flavors, like chamomile, licorice root, and the famous sloe berries used in pacharán production.
Patience is another ingredient we add, simply because we believe it’s beneficial for our beers; taking the necessary time to do things the way they should be done. No shortcuts, just time and dedication.
The process is broken down into the following stages:
1. Grinding of the malts
2. Mashing
3. Filtration and clarification
4. Boiling of the wort
5. Cooling and oxygenation
6. Fermentation (high or low depending on the recipes)
7. Maturation
8. Bottling and labeling
